How to Clean a Baking Tray (A Professional Cleaner's Secret)

Burnt-on grease and carbonized food are the two things that make a baking tray look permanently ruined. They aren't. Here's the exact method professional cleaners use to bring sheet pans back — no steel wool, no oven cleaner, no scrubbing until your wrist hurts.

Why baking trays get so bad in the first place

Every time you bake with oil at high heat, a thin layer of that oil polymerizes onto the pan. Wash it, and most of it stays. The next bake adds another layer. After a few dozen cycles, that build-up is essentially a hard plastic film — which is why dish soap and a sponge don't touch it. You need a chemical reaction to break it down, not more scrubbing.

The professional cleaner's secret: baking soda + hydrogen peroxide

This is the method we use on client baking trays and the one that works consistently on 90% of pans. Two ingredients, both under $5, both already in most homes.

  1. Sprinkle baking soda evenly over the whole tray. A generous layer — enough that you can't see the pan through it. Don't skimp; the reaction depends on volume.
  2. Drizzle 3% hydrogen peroxide across the baking soda until the whole surface is a wet, spreadable paste. Then sprinkle one more light layer of baking soda on top to trap the peroxide against the pan.
  3. Wait 30 minutes to 2 hours. Light burn: 30 minutes. Years-old build-up: 2 hours, or overnight. The peroxide breaks down carbonized oil while the baking soda holds it in place and provides gentle abrasion.
  4. Wipe with a non-scratch scrub sponge. The residue lifts off in dark streaks with almost no effort. For stubborn spots, add a little more baking soda and rub.
  5. Rinse with hot water and a drop of dish soap. Finish with a mist of white vinegar, wait a minute, and rinse again — the vinegar neutralizes any baking-soda film and brings the shine back.

Why this works when scrubbing doesn't

Hydrogen peroxide is a mild oxidizer. It converts the carbon in burnt-on food and polymerized oil back into water-soluble compounds you can wipe away. Baking soda is a mild base that saponifies (turns to soap) any remaining grease, and its crystal structure adds just enough abrasion to lift residue without scratching aluminum, stainless steel, or the ceramic coating on non-stick pans.

What NOT to use on a baking tray

  • Steel wool or metal scrapers. They gouge aluminum and strip the non-stick coating off coated pans, making future build-up worse.
  • Oven cleaner (lye-based). Discolors aluminum permanently — you'll trade burnt residue for a chalky gray finish that never comes back.
  • The dishwasher. High heat and detergent bake the residue on harder. Aluminum trays also oxidize into a dull gray in a dishwasher within a few cycles.
  • Bleach. Doesn't touch carbonized oil and corrodes aluminum on contact.

For truly stubborn trays: the boiled vinegar method

If the peroxide paste doesn't fully lift it, here's the follow-up: fill the tray with a shallow layer of water, add 1 cup of white vinegar and 2 tablespoons of dish soap, and simmer it on the stovetop for 10 minutes (works on trays that fit across two burners). Add 2 tablespoons of baking soda off the heat — it will foam. Let it sit until cool, then wipe. This dissolves anything the paste missed.

How to keep a baking tray from getting bad again

  • Line with parchment paper for anything oily. The 30 seconds of prep saves an hour of scrubbing later.
  • Wash while the pan is still warm. Grease releases far more easily before it fully cools and re-hardens.
  • Do a maintenance clean once a month. A quick baking-soda paste every few weeks prevents build-up from ever setting in.
  • Skip cooking spray. Aerosol spray is the single biggest cause of that gummy, sticky brown ring on the corners of sheet pans. Use a light brush of oil instead.

When it's time to replace the tray

If the pan is warped enough to spin on a flat counter, if the non-stick coating is flaking, or if aluminum has pitted through, no cleaning method will fix it — those are structural. Everything else is cleanable.

"Will this ruin the non-stick coating on my sheet pan?"

No — baking soda and hydrogen peroxide are both safe on ceramic and PTFE non-stick coatings as long as you use a non-scratch sponge (not steel wool). The paste lifts residue chemically, so you barely need to scrub.

"How long does the paste need to sit?"

30 minutes for light burn, 2 hours or overnight for years-old build-up. Longer never hurts. If the paste dries out, spritz a little more peroxide to re-wet it.

"Can I use this on a cast-iron pan?"

No. Baking soda and any liquid soak will strip cast-iron seasoning. Cast iron gets its own method — hot water, salt, and a chainmail scrubber, then re-oil while warm.

"What about the underside of the tray?"

Same method. The bottom is often worse than the top because drips run under the pan in the oven. Do both sides at once.
